Veganized Sloppy Joes Recipe:
Serves 2 - 4
Ingredients:
¾ Cup Onions, diced, divided
1 clove garlic, minced
1 cup carrots, chopped
2 cups red, yellow or orange bell peppers, chopped
1 can organic tomatoes, no salt added
1 tablespoon chili powder (more to taste if desired)
1 teaspoon paprika
1 tablespoon oregano
1 can organic lentils, rinsed
1 tablespoon olive oil
1 can organic tomatoes, no salt added
Directions:
Place 1/4 cup liquid from tomatoes in a pot over medium-high heat. Add ½ cup onion, garlic, carrot, and peppers and saute for 7-10 minutes, stirring constantly and adding tomato liquid as needed so that nothing sticks or burns. Add tomatoes, chili powder, paprika, oregano, salt and pepper and mix well. Place mixture in a blender and blend until completely smooth.  
Next: sauté remaining onion in olive oil, on medium heat, until translucent (about 3 minutes). Then add lentils and mixture from blender and mix well.  Season to taste with salt, pepper and chili powder. Allow to simmer over low heat 15-20 minutes, then serve on any bread or bun you choose.
