Everything from the fridge went into the crock pot: kale, carrots, tomatoes, kabocha, brussels sprouts, cauliflower, onion, parsley, basil, garlic, celery… After eleven hours in the crock pot, half was puréed in the Vitamix for a base sauce and all of it was mixed together with spelt pasta. Delish!

Dinner tonight: dry roasted kale, kabocha, cauliflower & red cabbage with polenta and black beans. Happy belly.
Cleaning out the fridge before Mexico lunch: roasted kabocha, brussels sprouts, cauliflower & kale with mashed beans & polenta. Seasoned with dry roasted, ground warming spices.
